Production process
The production process of mustard sauce includes alternating method and continuous method. The alternating method is to disperse the emulsifier in a part of the aqueous phase, then alternately add a small part of the oil phase and the remaining part of the aqueous phase, and then homogenize the obtained pre emulsion: the continuous method is to mix the aqueous phase and emulsifier evenly, and then add oil gradually under vigorous stirring to realize emulsification. The continuous production method is suitable to be carried out in a vacuum emulsifying machine, pumping vacuum, feeding oil and vinegar and stirring emulsification at the same time. The homogenization equipment is a grinding homogenizer.
